Sunday Kitchen: Sauteed Greens with Bacon

The other night Mike and I went out to dinner for our anniversary at the cutest little restaurant called “The Attic.”   Their menu is american southern cuisine.  IMG_3686

For my main entree, I had the chicken fried steak which was served with their house greens.   Once I took a bite of the greens, I wanted just a bowlful of them by themselves.  They were so delicious.   I wanted to try and recreate them at home.  So for the past few nights, everyone at my house  has been served greens with their dinner.

The ingredients are pretty much straight forward.

Bag of greens –  (you can even use chard)

1/2 chopped onion.

2 cloves of garlic

2-3 slices of smoked bacon

Chicken broth

Sautee onion, bacon and garlic until bacon is almost crisp.

Add in one bag of greens.  I get mine at Trader Joes because its already chopped for you.

Add in chicken broth as needed.  Greens will start to wilt.  I simmer for about 5 minutes and then they are ready to be served.

So delicious.

  1. And for those who keep kosher or are vegetarians, you can leave out the bacon and salt to taste. I sauté the onions and garlic in olive oil and use plain water. Still delicious!
